If you are worried about the towing capacity. Check with the boat dealer and they can tell you for sure.
But...
If you need to keep that truck (which you did not define) then there are some rules that will help you out with that conundrum.
1 get trailer with electric brakes and have brake unit added to your truck.
2 Set tongue weight of boat trailer (with all gear inside of boat) between 250 and 300 lbs. This can be done by moving boat forward or backward on trailer with landing gear weight measured on regular bathroom scales.

The payload capacity is what you put IN the truck.
Nothing to do with towing capacity.
Towing capacity is based on the bumper [if used to tow], the frame, springs, brakes, transmission, clutch or torque converter, and the engine size.
5000lbs is [most likely] your towing capacity without a Weight Distribution System. Tow capacity may or may not be more with one of those systems. You will have to dig to find that info for your specific truck. With a load more than 1/2 the weight of the tow rig you should use one anyway.

The payload capacity is based on the frame design. Which is then fitted accordingly with the right suspension and rear end.
If your pull something heavier than the capacity, it will twist the frame and if you ever driven behind a truck or van that looks like it is driving sideways at an angle, then you now know why.
